5.Character: Exhibiting a pristine, colorless transparency, this orthorhombic crystal is ideal for precision applications, although it is deliquescent. With a relative density of 1.769 at 50ºC, it showcases remarkable stability. Easily dissolving in water (at 0ºC, its solubility reaches 70.6g per 100mL water; at 100ºC, 103.8g per 100mL water). The aqueous solution is distinctly acidic. However, it's insoluble in ethanol, offering unique utility.. Plus, it engages in reactions with alkalies to create fascinating compounds.
6.Usage: In accordance with GB 2760-2011 standards, this versatile compound serves as a processing aid, typically utilized as a nutrient in fermentation processes. Additionally, it's a brilliant dough regulator and a preferred yeast food. In fresh yeast production, it's the source of nitrogen for yeast cultivation (Dosage remains flexible). An approximate dosage of 10% is recommended (approximately 0.25% when applied in wheat powder) as an essential yeast nutrient for bread making.
