,Chemical Name: Disodium Phosphate
,Molecular Formula:, Na2HPO4,Na2HPO4·2H2O,Na2HPO4·12H2O
,Molecular Weight: Anhydrous: 141.99; Dihydrate: 177.96; Dodecahydrate: 358.14
,CAS: Anhydrous: 7558-79-4; Dihydrate: 10028-24-7; Dodecahydrate: 10039-32-4
,Character: It is white or colorless rhombic crystalline or prismatic crystal. It's easily soluble in water, but insoluble in ethanol. The relative density is 1.52 and melting point is 34.6ºC. If heated to 180ºC, it will lose crystal water and convert to anhydrous.
,Usage: In food industry, it is used as agent for baking to avoid oxidation stain and as emulsifier in dairy product to prevent egg white from solidification. It is also used as emulsifier and chelating agent for solid drinks.
,Packing: It is packed with polyethylene bag as inner layer and a compound plastic woven bag as outer layer. The net weight of each bag is 25kg.
,Storage and Transport: It should be stored in a dry and ventilative warehouse, kept away from heat and moisture during transportation, unloaded with care so as to avoid damage. Furthermore, it must be stored separately from poisonous substances.
